Moving away from conventional launches, Godrej Vikhroli Cucina brought this eighth edition alive through a theatrical experience that blended storytelling, satire, and emotion under the theme “Seasons.”
Compiled from insights shared by over 190 culinary experts-including chefs, food writers, mixologists, nutritionists, and entrepreneurs-the GFTR 2025 offers a compelling glimpse into India’s evolving food landscape. This year’s central theme is seasonality, with 82% of contributors highlighting a shift back to local, seasonal, and culturally rooted ingredients. This shift is influencing menus across home kitchens and fine dining, reconnecting people with traditional, intuitive eating patterns.

Key Trends from the Report:
- Immersive Dining: 74% predict a rise in multi-course, experiential tasting menus.
- Frozen Gourmet: 66% see frozen snacks like momos, kebabs, and burger patties becoming daily essentials.
- Himalayan Cuisines: 85% point to the growing popularity of Himalayan dishes due to their sustainability and clean-label appeal.
- Heritage Alcohols: 78% expect demand for traditional Indian spirits like feni and mahua to surge.
- Top Food Destination: Goa leads as the most exciting culinary hub, according to 89% of experts.
